Barking Dog Recipe

Finding a really cool and fun recipe is not easy but thanks to my new dog friend "Pugzee" from Brooklyn, New York; who shared with me a delicious recipe he found in Vegetariansrecipes.org.

Of course like all recipes, I just had to share this one with you.

Barking Dog Burritos

Ingredients (use vegan versions):
  • 2 doz whole wheat tortillas
  • one onion
  • 1lb broccoli
  • 1/4 lb mushrooms
  • 4-5 zucchini squash
  • 2 large tomatoes
  • 4 large Haas avocados
  • your choice for salsa
Directions:

Chop ingredients 2-6 and place in a large frying pan (electric works well). Turn to medium heat
(300 if using the electric fry pan) to steam about 20-30 minutes. Check frequently and stir.
Wrap tortillas in foil and put in a warm oven to heat. Make guacamole from the avocados,
keeping one pit in the salad to prevent it from browning. Allow each person to assemble his/her
burrito as they wish, with plenty of salsa and guac. Enjoy with many napkins on the side.

The only fat comes from the avocados and tortillas, but as triathletes and runners we aren't
worried, we just work it off.

My Habibi, wants hummus!

On my trip to Arab world, I was invited to a social gathering where belly dancers moved so naturally their bone and muscle structure, with movements emanating from the torso rather than in the legs and feet.

I didn't know what to eat so many delicious foods to choose from. I looked around to see if anyone can help me and then she appeared.

She shouted: "My habibi (my darling), wants hummus!"

I asked, "What is hummus?"

She said,"Hummus is a delicious dip made of chickpeas, olive oil, paprika, lemon juice, salt and pepper for taste"

This is where my love for hummus started.

Check out the famous dip for yourself and remember your habibi might want some too.


Hummus Recipe

Ingredients:

15 oz can of chick peas

2 tbsp lemon juice

1 clove crushed garlic

salt & pepper to taste

olive oil

dash of paprika

crackers & veggies for dipping

Directions:

Drain the water off the chick peas and reserve for later. Place chick peas, lemon juice, garlic, salt & pepper, olive oil & paprika in a food processor and blend. Slowly add some of the water from the chick peas and blend until the mixture is smooth but still thick. Refrigerate for about 30 minutes then enjoy with crackers & veggies. Keeps well in the fridge.

Cold? Have cup of Happy Hot Chocolate!

Winter is a great time to watch movies with the family and sip hot chocolate. Try this Happy Hot Chocolate for those family gatherings.

The Goods:

One 3.5 oz bar of unsweetened chocolate (90-100% cacao is best)
3 cups organic milk (almond, rice, cow, goat- whatever :)
2 teaspoons pure organic vanilla extract
organic agave nectar to taste
medium pot (3-4 qt)
wire wisk

Putting it all together:

Pour the milk in a 3-4 qt. pot and heat on a medium flame.
While heating, break up the chocolate into small chunks.
When milk is nearly hot, add chocolate and stir quickly with wisk.
Heat until mixture is hot and chocolate is melted. Keep stirring!
It may start to bubble a little-that's ok.-it's done!
Turn off heat, add vanilla, pour into cups and add agave to taste. Yum!
