My Habibi, wants hummus!

On my trip to Arab world, I was invited to a social gathering where belly dancers moved so naturally their bone and muscle structure, with movements emanating from the torso rather than in the legs and feet.

I didn't know what to eat so many delicious foods to choose from. I looked around to see if anyone can help me and then she appeared.

She shouted: "My habibi (my darling), wants hummus!"

I asked, "What is hummus?"

She said,"Hummus is a delicious dip made of chickpeas, olive oil, paprika, lemon juice, salt and pepper for taste"

This is where my love for hummus started.

Hummus Recipe

Ingredients:

15 oz can of chick peas

2 tbsp lemon juice

1 clove crushed garlic

salt & pepper to taste

olive oil

dash of paprika

crackers & veggies for dipping

Directions:

Drain the water off the chick peas and reserve for later. Place chick peas, lemon juice, garlic, salt & pepper, olive oil & paprika in a food processor and blend. Slowly add some of the water from the chick peas and blend until the mixture is smooth but still thick. Refrigerate for about 30 minutes then enjoy with crackers & veggies. Keeps well in the fridge.
